Just get a picnic cooler and put your bird in a plastic bag, place bag inside the cooler, then surround with ice. The ice will keep the bird at a steady 0 degrees for well over a day or more. Remove from icy water two hours before putting in oven. Keep covered in bag. 10 minutes before putting in oven, rinse thoroughly, pat dry and salt inside and out.

Then prepare as you normally would.

gastro, there is no doubt that much of a "great" sausage's taste comes from using the "right" part of the animal. PErhaps we should leave it at that so that everyone can still enjoy a great pork sausage.

I buy a fabulous organic pork and pear sausage from a vendor "P" that supplies a supermarket "W" and have had the opportunity to talk with the producer. These sausages use many parts of the animal that do not have general "acceptance" - to put it mildly.

But they are the best sausages I have ever tasted!!

A sausage made from loin of pork would be dreadful, to say the least. That's why Fort's attempt to force an 80% minimum is just nonsense. The pork and per sausage is only 58% pork....

Dougy, I'm with you 1000% on this one. The food being shown on Market Kitchen recently is just naff.

The show is so patently phoney in every regard. But what has my goat [see, another odd ingredient!] is the terrible food they are preparing of late.

So many ingredients are simply unobtainable [although I grow chervil and get at their "roots"] or Eekish - it's a complete turn-off. Squirrel and included.

I don't that was the point at all Larissa, certainly no one was trying to insult the "Romany Community"?! No need for such sensitivity Big Grin

The point wasn't any one of those ingredients..GFL also occcassionally has the odd ingredient..the problem is the whole lot combined on MK. It's as if Market Kitchen is trying to prove some sort of obscure point but in the process has just gotten lost.

The food being presented recently is just off. Either it is inaccessible [or aat least so difficult to obtai no one would bother] or it is simply uninteresting.

I am rarely motivated to even try anything shown on Market Kitchen, unlike so many other shows like Contessa and Simply Italian. And, yes, even GFL.

Exactly, Kenneth. That's why the addition of Diana to Market Kitchen has been a positive.

You're so right about there being a wonderful lot of great chefs that are "TV presentable"

How they picked that dire bunch of presenters is beyond me. Four! And they got them all wrong!? What were they thinking?

Watching them on TV, to me it is now obvious that Tana Ramsey and Tom Parker-Bowles were simply chosen because of their names, hoping that alone would pull in ratings. How stupid.

You're right Jess, the recipes are simply uninteresting and over the top. I can't fathom what this programme is on about.

But Arthur's point about passion is absoultely right. While Diana is indeed the liveliest of the bunch, bless her, the presenters just don't have it. Tana looks and acts so bored! She obviously just doesn't want to be there. Honestly, cobwebs can be seen forming off her lovely hips.

MF and TPB just go through the motiuons, really. Luckluster.

Passion!!! That's what we need to see!!!

I really think they're phasing Tana out of the picture, grissini. Even at the end of last season they relegated her to prerecorded "Market Duty".

She just doesn't fit in with the others and her television skills are sorely lacking.

While none of the presenters are commendable really, Tana is by far the worst of the bunch IMHO. Awkward. And she actually appears bored with her role.

There is absolutely no hope for this programme. The research is non-existant, the TV expertise of the presenters is close to zero and NONE of them can hold the audience's attention more than a nanosecond.

An interesting observation anne!!! Perhaps Diana H is our Jeni replacement?

After nine months watching this programme in complete bewilderment, I finally have figured it out!!! We've all "been had"!

Market Kitchen is a parody of food programmes!

It came to me as a flash reading these posts about foie gras overdoses, chervil root, then that hideous rattlesnake episode and now this discussion about eating your neighbourhood squirrel population to save the red squirrels.

It's all a joke on us!!!

They've proven we're just a bunch of dumbos ready to watch anything and they've been laughing at us all along! Now I'm angry.

But as a parody of everything else currently on food TV, it's actually quite good, isn't it? THAT makes me laugh!

Yes, the have indeed foisted this garbage onto our screens nightly.

Clearly the lights are out! Frasier has left the building!

Does anyone know who dreamt up this Market Ktichen concept...there doesn't seem to be any credit for that at the end of the show? Just "commissioning executives", who probably are no longer with UKTV. Angry Mad

I would have to conclude GFL that Market Kitchen will soon be placed in the ground. RIP.

And yes, Falafel, Two Fat Ladies is a much better show than MK, although I don't think I could eat much of what they cooked Big Grin Big Grin

Let's all hope for a renewed GFL in the seasons to come!!

posset, you cannot serve the cheese on the slate floor tiles unless you include local amazonian figs, unethical foie gras, rattlesnake noisettes and poached venison liver pate along side.

How many stories do you have like this billy2blues? You should write a book! I would certainly buy it. Not only can I tatse the food, I can see myself in situ.

I read your post twice is was so wonderful.

And I am fascinated by this "minced by a paddle" concept. While I could visualise it exactly as you wrote it, I have never heard or seen of such a technique.

And I too absolutely LOVE your comparison of UKTVFood to the Mary Celeste!! Big Grin Big Grin An absolutely perfect metaphor.

Foodie, that's why I posted it. Youre suggestion is absolutely perfeect in its simplicity.

Market Kitchen is unwatchable. Full stop. And.....UKTVFood is a channel of interminable repeats of repeats.

So, replace Market Kitchen with old Great Food Live shows.

It's a win-win-win for everyone.

And maybe - just maybe - the loyal UKTVFood viewers will ultimately forgive the silliness of the past 9 months?! Angry Frown

Considering how may TV shows have been cancelled only to have been resurrected later, I think GFL has a great chance to be re-born.

The silly decision to replace GFL with the absolutely frightful Market Kitchen production is truly unforgivable. No wonder the viewing figures have collapsed.

Have you ever tried to watch Market Kitchen? It's impossible to endure more than 15 minutes.

Well almost ANY repeat programme is better than Market Kitchen, Dougy, so your numbers are not at all a surprise.

Look at the shows above. Heston, Contessa, Stein. Repeats maybe, but FAR more entertaining than boring old Market Kitchen. Yuk.

So, please, please replace Market Kitchen with repeats of GFL!

An excellent point. I didn't know transmissions ceased every night? What a simple thing to do, just plnk GFL on during this period. We all have recording devices!

And we can then play back our recorded GFL repeats at 8PM the follow evening!! Big Grin

That's great news ticked! I'm sure to watch, I didn't realise it was going to be daily, maybe now something to keep us entertained as MK certainly can't.

I can't believe what they've done to UKTVFood. A tragedy.

This whole programme is tired and boring. If they would only cancel this show hopefully UKTVFood could restore its viewership.

The program is phoney and hypocritical.
