how about a nice green salad, seasonal, with a few herbs, sun dried tomatoes, artichokes etc, good french dressing
light but tasty

i survived in a studio flat with a microwave for a few months
i know it's not brilliant food but microwave rice/pasta & sauces, pesto etc, all keeps in the cupboard & fills you up
instant mash using hot water, microwave some beans, yum!
haha
it's tacky stuff but you've gotta eat!

the thing with vodka jellies is you have to be careful not to put too much vodka in or they dont set! I think about half vodka & half water works a treat.

i dont know much about flavoured vodkas. absolut make vanilla, lemon, orange, raspberry, currant...

you could try some cocktails - cosmopolitains are quite seasonal as they're made with cranberry juice.
