Please can anyone tell me what to do with/how to cook dry soya mince? Tesco's are selling 800g bags, but there are no instructions on the packs. I have used r**leat frozen vegemince before, but the dried stuff is even cheaper. Do I need to boil it first or just soak it in stock?? HELP! - Also is it better for you than the frozen?

I think you need to use demarara sugar, I tried all different types, we ate failed gypsy tart for weeks and got quite chunky!

Here's one of the more successful ones - it was a catering recipe, so you'd need to downsize it a bit....

250g butter or spread (half & half recommended)
500g brown sugar
1/3pt milk
1kg pastry
2 heaped tbsp flour

Pre-cook the pastry.
Melt butter/spread on a low heat.
Add the milk and sugar stirring until dissolved.
Whisk in the flour.
As soon as the mixture thickens reduce the heat.
Pour onto the pastry and allow to cool.

Hmmm .. now there's a thought, but I don't fancy getting arrested really.... Develish Big Grin I could try my library but then I'd need to get past the SS officers on the desk... not a pleasant experience

Do you happen to know if it is in a recent book, sort of like in the last couple of years persay? Surely Mr/Ms Moderator wouldn't be cross if you told me that now would he/she Cheeky Eek

Does anybody have any ideas for easy healthy desserts? I can't seem to think outside the box beyond fruit or yoghurt! (Well there's fruit salad obviously.....) Embarrassed

Frenchie 1: I had a similar problem, someone told me that you have to use demarara sugar, but I only had light brown soft sugar at the time. What sort did you use?

You've bought a shed load of All bran to get the free pedometer haven't you?! I did exactly the same thing and though "Ah I know there was arecipe for All bran loaf on UKTV Food.. .talk about great minds ... and this saves me searching for it. Wink

I had a look and yes there are loads of great websites with some excellent reipe ideas. However, none yet for "custard" as far as I can see.... Confused

Hi again, I need to prepare a casserole in advance next week for someone to reheat the next day. I wanted to add dumplings to it as well. Can I add them at the end of cooking the casserole on the first day, then leave them on the cooled casserole and get the person to reheat the whole lot in one pot the next day? Would the dumplings be rubbery or collapse? Has anyone done this before, and how successful was it? Any tips please woudl be most helpful. Thanks.

Does anybody have any good tips for a dairy-free style custard dessert? - I realise that custard also has egg in it, but I know you can get soya milk and wondered if there's a way of making a sort of custard... Any dairy free tips /ideas would be much appreciated. Thanks.

Delia's pancake recipes always work, my failsafe.... if you look in any Delia book you should find a recipes for it, or probably even onthe web.. can't post it due to copyright..... Cheeky

Nadia24: Actually I have just thought, I have superb, low calorie veggie lasagne recipe which is always a hit even with the most blood thirsty carnivores... It's a low calorie one, great for a frugal bit of entertaining for a large crowd, and you can freeze it.....

Red Pepper Lasagne:
4 red peppers (or a mix of red/orange and yellow is good too)
1 tbsp olive oil
1 onion
1 or 2 cloves garlic crushed
175g chestnut mushrooms sliced
400g can chopped toms
2 tbsp fresh chopped basil
25g cornflour
300ml skimmed milk
200g low-fat soft cheese with garlic and herbs (eg boursin light)
6 sheets oven ready lasagne
salt n pepper

Halve and de-seed peppers - grill until skins are blackened, then pop into a plastic bag to cool. When cool peel away skins and slice thinly.

Fry onion and garlic in olive oil till soft. Add sliced mushrooms and the pepper strips and cook for 5 mins. Stir in chopped toms, season well and add chopped fresh basil (dry will do but reduce amount) simmer gently 10 mins.

Preheat oven 190c gas 5/375F. Mix cornflour with a little bit from 300 ml skim milk to make thin paste. Heat rest of milk in pan till boiling then pour onto paste. Mix well, then return to pan. Cook stirring till sauce thickens, Simmer very gently for 3- 5 mins. Add soft cheese, stir until cheese melts into sauce.

Assemble lasagne, spoon half of the pepper mix over base of lasagne dish, top with 3 sheets of lasagne, drizzle with half of cheese sauce, repeat layers finishing with a layer of sauce - sometimes I make double the sauce or thin it with more milk. Sprinkle with a little hard cheddar or parmesan if desired according to calorie requirements!
Bake 30-40 mins till bubbling and golden, serve hot with crispy salad ........... boy am I hungry..... oh and seves 4 people@ 300 calories each!

Sounds yummy, might try that one. I don't think to buy butternut squash - am a bit set in my ways re my veggies. A good inspiration, hope the super market has some butternut squash.

I also make a good chili con carne lasagne and top it off with crushed taco chips - haven't made one for a while, .. think we'll be having a variety of lasagne's in the next few weeks.... Smile
