Chocolate Ganache

make ganache the exact same way as fondant. bring cream to simmer, remove from heat and chuck the cream over smashed chocolate and stir til fully mixed. Job Done

a drop of cream or water just before you get to the last few tablespoons of clarified butter. dont add too much cream coz then it'll become a sauce mousseline. all the best for you and your pal

eating out on the isle of mull

was on holiday on mull, didnt think i'd find anywhere decent to eat. went to balamory, no good and seriously overpriced!! but went to a small village called bunessan and went to a place called reef, lovely scran and even watched the chef walk thru the restaurant carryin a box of flippin and slappin fish!! you cant get fresher than that!!
