Making Bacon!

Lynn 505, you sound like just the person I would like to chat to about making my own bacon and ham. Please help.

Bacon

I would really like to make my own bacon - cure it and smoke it myself. My memories of Britian is that they really do have the best bacon. Can anyone help me on my way to delicious home cured bacon?

cannelloni with leeks and ?

Hi Chris, I saw that specific program and Rick Stein made a basic filling of leeks fried in butter with a touch of salt and pepper. He then stuffed bought canneloni tubes with this stuffing. He made a quick sauce, cooking chopped italian tomatoes in a bit of olive oil, adding a bit of salt and pepper, and an interesting touch was adding a teaspoon of sugar and then finally a tablespoon or two of vinegar and just cooking it for a couple of minutes. Then he buttered a dish and poured the tomatoe sauce, which should still be chunky, in the dish and putting the stuffed tubes on top. Thereafter he made a bechamel sauce (white sauce) adding cheese aswell, preferably strong such as parmesan and finally topping it with a good sprinkling of cheese. it was then baked at 180 degrees C for appr. 30 minutes.
