I just find the whole thing rushed! It makes me anxious watching it. No time is taken and it is noisy, I mean the background noise makes it chaotic. Time is always running out and there is no enthusiasm, no laughter, no fun. Very disappointed.

I have just changed work area, and now work as an Occupational Therapist on a mental health ward. 99% of the patients are severely obese. Their diet consists of burgers, pies, sausages, bacon, black pudding, battered anything, chicken korma ('nothing too hot'), mash, takeaways, chips, chips oh and did I mention chips!

I do cooking sessions to increase motivation concentration, coordination, planning, self esteem and address functional deficits. As a team we are trying to teach healthy living skills, but I am struggling to adapt there eating habits. I need some recipes. I am a competent cook and have managed to convince one who is really trying. The recipes must be simply with few components and be tried and tested. I need Jamie Oliver!!!

It is a real issue as many clients are on medications which put weight on individuals both chemically and due to increasing there appetite. We have a ward meal coming up and I am looking at making home made burgers and potato wedges (they turned there nose up at pizza, sweet and sour chicken and spag ball!)

I need individual meals not the meals for the ward as we make that.

I AM REALLY UP AGAINST IT ANY HELP WOULD BE APPRECIATED.

Why not add more fruit and less chocolate. You could add some crushed digestives / hobnobs / nuts, or how about marshmallows.

You could make it more fudge like by using a tin of sweetened condensed milk dark chocolate and some vanilla essence.

I know it is changing the recipe but thought this sounded nice! It is based on a Gary Rhodes Recipe

225g best dark chocolate (can use white or milk)
4 eggs separated
25g caster sugar
150ml Lightly whipped cream
Fruit of choice

1. Melt chocolate and cool slightly.
2. Add egg yolks.
3. Whisk sugar and egg whites until firm (will not go too firm because of less sugar).
4. Fold whites into chocolate. Put in a little to begin with and then fold the rest in.
5. Fold in lightly whipped cream.
6. Pour over fruit and chill

7. Take out 20-30 minutes before serving.

Cheese flan

Ingredients

Serves: 6

100 Gram Butter
100 Gram Wholemeal flour
100 Gram Self raising flour
225 Gram Smoked streaky bacon, chopped
100 Gram cheese crumbled (choose your favourite)
3 Eggs, beaten
225 ml Milk (8 fl oz)
Freshly ground black pepper

Method

Rub the butter into the flours until the mixture resembles fine breadcrumbs. Add 3 tablespoons milk and mix to a firm dough. Roll out on a floured work surface and use to line a 28 x 20 cm (11 x 8 inch) rectangular flan tin. Bake blind at 200 °C / 400 °F / Gas 6 for 10 minutes.

Place the cheese in the flan case (or add to egg mixture up to you).

Beat together the eggs and milk, season and pour into the flan. Bake 180 °C / 350 °F / Gas 4 for 25 minutes until set. Cut into squares and serve hot or cold.


Can add in 450grams of Leeks and 225grams of bacon sweated off. Fresh dill sprinkled on top is good too.

Pancakes (make batter night before) with maple syrup and bacon, or honey and vege bacon or how about porridge with pistachio’s, pecans or almonds nut cranberries and honey and a dash of cream, my granny used to make a load of porridge and store it in a drawer! Not suggesting you do that but you can pre-cook it Wink

Thanks for the reply however it is 2 pieces of
fillet, one weighing .568g and one at .624g I have. Though about roasting, what do you think????

Help!! I have bough 1.2kg of Ostrich Fillet for Christmas dinner. I have no ideas of cooking times or the nicest way to serve it? I thought about redcurrent or home made cranberry sauce, but I have no idea what the meat tastes like so can not match to a recipe! Any help would be appreciated. Wink
