Chocolate and cola add the wow factor to James Martin's superb cake

Method

1. Preheat the oven to 180°C/gas 4. Grease a 24cm loose-bottomed cake tin.

2. Sift the flour into a bowl. Mix in the bicarbonate of soda, cocoa powder and sugar.

3. Stir in the eggs and vanilla extract.

4. Put the butter in a saucepan and melt over gentle heat.

5. Add the cola to the butter and stir to mix, making sure mixture does not boil. Stir in the milk and remove from the heat.

6. Quickly whisk the cola mixture into the dry ingredients. Mix gently but thoroughly.

7. Pour the mixture into the prepared tin. Bake for about 40 minutes or until a skewer inserted into the centre comes out clean.

8. Leave to cool in the tin for about 15 minutes.

9. Meanwhile, make the frosting. Sift the icing sugar into a bowl. Put the butter in a saucepan and melt over gentle heat. Stir in the cola and cocoa powder. Bring the mixture to the boil, then pour it over the icing sugar. Beat until smooth.

10. With the cake still in the tin, pour the frosting over it and leave in the tin until completely cool.

This is so stupidly simple to make and comes out perfect every time. Even use it to make buns too.

Loved this recipe,stayed fresh for days BUT did take alot longer to cook than stated in recipe - will be maing it again this weekend

Oh My God My 7 year old daughter and I made this today and it is delicious! She is even taking a piece in for her teacher tomorrow in the hope of getting extra stars on her chart! Somehow I think it might work!!

This is a stunning cake. Super moist and very tasty. My 5 and 6 year olds told me they were 'in chocolate heaven'!!! High praise indeed methinks! lol Thanks for the recipe!

Delicious when made with the correct liquid quantities - In James Martins book it says 200ml cola & 75ml milk.

I think this recipe is wrong or has the wrong liquid/dry mix... I have spent a fortune on ingredients trying to get it right. Even my boss (a pastry chef) couldn't work it out!

I managed to rescue my cake after putting in the 250mls of milk, at end of 40 min take it out and give it good stir, put back in oven for further 10minutes, ok so it looks a mess but after you add the double frosting nobody but you need know!!

I made this cake recently and everyone loves it. 80ml should be enough - give it 30 mins then check but only use very good butter!!

Just made this cake and it tastes good. BUT glad I only added 125ml of milk, rather than the 250ml stated, as it was gooey in the middle after 40mins, think I gave it another 50 mins!

My cake has been in the oven for almost an hour and the middle of it is still iquid. im abandoning it, what a waste of time, energy and money!

WATCH OUT! This recipe has way too much milk. The original recipe says 75ml, NOT 250ml like it says here

Could the problem be that the oven is marked in fahrenheit not centigrade?

I think the commenters below need to check the ovens as just baked this cake in the 40 min and its perfect

I baked this cake today, it did need to stay in the oven a little longer than in the recipe, approx 1 hr, the reason the mixture seemed runny is that the butter is melted! Turned out gorgeous though.

Just tried this recioe. Took a long time to bake. Took nearly 2 hours. Very runny mixture. I agree with bertiepops. How is there such a difference between the recipe and actual cooking time?

There is a difference in recipes from this website and the bbc version. The bbc version says 250 ml of coke instead of milk, which is correct?
