Hi Does anyone know if it's ok to prepare a dessert consisting of ice-cream, fresh berries, shortbread biscuit and whipped cream, then freezing it? I normally make them just before serving (individually into plastic disposable beakers) but I want to prepare for 30 in advance. Would it all defrost and still be/look ok?

Hi Ruthie, Whipped cream should be added just before serving. It has too much water and volume to freeze satisfactorily. I assume the shortbread biccy is soft and not crunchy in the recipe as it will soften when frozen.
