Bad Science

I listened with interest to the piece on Market Kitchen with Jane Clarke, BSc (Honours) SRD [apparently Britain’s most renowned and trusted Nutritionist - a trained Cordon Bleu Chef, whose beliefs are grounded in the simple statement that ‘food nourishes your life, not just your body’.]

She kept referring to MSG as a preservative. It is no such thing - it is a flavour enhancer and has no food-preserving qualities whatsoever.

Another myth is that sodium as such is bad for one. Sodium Chloride is the one sodium compound that causes water-retention which can lead to hypertension. The fact that MSG is a sodium compound does not make it automatically bad.

If her assertions regarding msg and sodium are typical of the rest of her output (which I have never studied) she should be looking for a different field of work because she surely doesn't know what she is blathering about.

It is the promotion of bad science which causes confusion and fear in the public.
