Doe anyone know what Fava beans are please, or an alternative. thanks! Smile Also would like to know what Arugula is, the Americans use it, think it might be rocket? Hug

Fava beans is basically broad beans, but it comes in dried form and used extensively in Egypt. You can get it quite easily as long as you can find a middle-eastern food shop. If not, it is possible to substitute with fresh broad beans but the flavour and the texture is bit different from the dried one, naturally.

Arugula is, as you guessed it right, another name for rocket ( or ruccola in Italian).

Just an additional note.

If you saw 'fava beans' in French or Italian recipe, it might mean fresh broad bean (or similar bean of the same family).
