My daughter of 2 yrs is allergic to egg cooked or raw, white and yolks. this limits some of the foods I can offer her.

What can I use instead of egg for example when making; beef or lamb burgers need something to use a binding agent. Coating when making chicken and fish goujons for finger foods.
Cakes/desserts are very limited to jelly/ice cream and fresh fruit oh yes and chocolate.

I try to keep to fresh ingredients where possible. Any suggestions would be most helpful. Smile

Hi Vicki36 -

Some useful information on this link, including a binding agent for burgers.

Have you tried dipping the goujons in milk then coating with breadcrumbs?

When I make fish cakes I just dust them with a little flour then fry in a tiny bit of oil. They usually come out quite crispy.

There's a Georgio Locatelli recipe for an Eggless Chocolate Cake on this link. I remember seeing him make it for his little girl as she is also allergic to eggs.

I do hope you find something which is easy for you to make and tasty enough for your little girl to enjoy!!

Maybe someone else who has this problem in their family can give you more information.

Hi Vicki, You might like to try this recipe which we use when we have to make dairy and egg free cakes.
DAIRY FREE CHOCOLATE CAKE

INGREDIENTS METRIC POUNDS & OUNCES
Self raising flour 300g 12oz
Brown sugar 300g 12oz
Cocoa Powder 50g 2oz
Salt Pinch Pinch
Water 480g 16 fl oz
Vegetable oil 60g 2 fl oz
Vinegar 10g ½ oz

Method
1. Preheat the oven to 180C, 350F.
2. In a large mixing bowl, mix together all the dry ingredients .
3. Mix the liquids together and stream in on slow speed.
4. Mix on second speed for two minutws.
5. Transfer the mixture to a 20cm/8 inch cake tin and bake for 30 - 35 minutes.
You can also put it in a plastic bowl and make a steamed or micrwave pudding out of it and add a chocolate sauce.
Happy baking.
