Hi Sommersunshine -

I was always under the impression that Baking Soda and Bicarbonate of Soda were one and the same, so I checked The Joy of Baking website and found this information.

Baking soda, also known as sodium bicarbonate or bicarbonate of soda (alkali) is about four times as strong as baking powder. It is used in recipes that contain an acidic ingredient (e.g. vinegar, citrus juice, sour cream, yogurt, buttermilk, chocolate.

Hi Livewire

Thanks for looking. I too read that as a replacement of 1 teaspoon of baking soda you can use 4 teaspoons of baking powder so thats what i did and it worked. I think however it working depends on the rest of your ingredients and so i was lucky on this occasion.

Thank you

According to Wikipedia, baking powder is a mixture of Bi carb and Tartaric acid.
Check it out at this site...[link]

Hi Homebrewer

Thanks for looking into it for me but i managed to sort something out. Its weird though as some sites are saying baking soda is also known as bicarbonate soda and others say the are individual ingredients. On the Delia Smith site she names them as being seperate items. I found on ebay you can get Baking Soda as a result im unsure if its something we would use much here in the UK or goes by that name here. A mind boggle but my muffins turned out very well regardless.

Thanks again
