Hi sweetpea14 -

Just boil, roast or bake them like ordinary potatoes. You can add them to soups, stews. In fact anything you can do with an ordinary potato you can do the same with a sweet potato.

I prefer the orange flesh ones to the white. My favourite is boiled, mashed, then mix in some grainy mustard and lemon juice to taste.

I am not averse to watching this type of programme, but definitely not on the UKTVFood channel.

As you say, applesauce, it is more suited to the Discovery/Nature type channels.

Hi windy8 -

Usually you would soak the vermicelli in hot water for at least 10 minutes and drain well before adding to the pan. This is not indicated in the recipe.

I think the problem with this recipe is the addition of 4 eggs. Most Singapore Vermicelli/Noodle recipes do not add eggs. I have seen recipes where the noodles are served over a thinly sliced omelette, but this is made separately.

Lots of the recipes on this site are a bit dodgy - a bit like playing Russian roulette. Posters have asked for ingredients/amounts to be checked, but it seems to fall on deaf ears. The recipes on the BBCFood site are much more reliable.

I was always under the impression that Baking Soda and Bicarbonate of Soda were one and the same, so I checked The Joy of Baking website and found this information.

Baking soda, also known as sodium bicarbonate or bicarbonate of soda (alkali) is about four times as strong as baking powder. It is used in recipes that contain an acidic ingredient (e.g. vinegar, citrus juice, sour cream, yogurt, buttermilk, chocolate.

I take it you are talking about "Saturday Kitchen", the programme in which Abi TITMUSS appeared, this was made by the BBC and not UKTVFood.

If the programme offended you so much you should direct your complaints to the BBC and not UKTVFood, although it's a bit late now as the programme first aired on 16th September, 2006.

I've just checked Sainsbury online. They have listed Sundora Coconut, sweetened and tenderised - 400gr pack for £1.49. Says it's ideal for making coconut ice, coconut pyramids, macaroon, biscuits, lamingtons and to decorate cakes, gateau and sweet truffles.

Also checked Julian Graves website. They have flaked coconut, but unfortunately no more details.
